RoseA picture i took recently which was desaturated then the colour added back into the petals using the history brush in photoshop. Won't be to everyones taste i know but would like you views.
Or here is just the B&W version

RoseI agree it is not everyones cup of tea, but your attempt is quite a good one. I would prefer less depth of field, so that the background is even more out of focus (you can do this by creating a new layer in PS and then using the Gausian Blur filter, after that create a mask and bring back the sharp picture through the blured one).
Not sure what happened on the B&W version as the background has become blown, where as it is not blown on the first image.
I find them better when you only bring back part of the colour rather than the "full on" saturation. Put a B&W layer on top of the colour layer and then use the "opacity" slider on the B&W layer to bring back some of the colour from the colour layer underneath.

I think i've over done it with the contrast in the B&W one.
I'll try what you've suggested with the layers.

I rather like the red rose/desturated background. Not sure it works as a b&w image in this case. I would crop off a bit more of the top of the photo, to raise the rose higher up the frame.
